As your executive chef, I am delighted to present our new Fall menu which is committed to bring not only a purely delicious meal to the table but a healthier one too. The season lends itself to deep layered flavors that warm and soothe us. On our lunch menu you will find twists on traditional comfort foods, like Brome Lake Duck Confit, Shepherds' Pie with Buttermilk Potato Au Gratin and Fairwind Farms Chevre Bison Burger with Truffle Aioli. For the evening, we offer a new take on the ubiquitous "Surf and Turf"; locally raised beef tenderloin with Madeirasauce and lobster potato mash. Or try the organic Paddle River Wapiti meatloaf, wrapped with double smoked rashers and served with Stilton cream sauce. We are also slow braising a smoked paprikaAlbertalamb shank in the Osso Buco style which is accompanied by a Rustic Pomodoro sauce.
